Mid-Week Motivation

Good afternoon and HAPPY HALLOWEEN! Hopefully everyone is going to do something fun to celebrate todaybe it dressing in a silly costume at work, watching scary movies with friends or passing out candy to the kiddos in your neighborhood. For Mr. and Mrs. Clayton P., tonight we will be snuggled on the couch watching Hocus Pocus and indulging in a batch of chocolate chip cookies now that I figured out how my oven works.

Thanks to my position in HR, I'm responsible for boosting company morale and was tasked with hosting a Halloween pitch-in today in the office (I welcome any opportunity to go crazy with Dollar Store decorations!). Since I can't very well encourage employees to dress in costumes while I show up in my normal office attire, I came to work wearing my Atlanta Braves jersey, cleats and shoe polish under my eyes.

Yes, I am Chipper Jones. Baseball season is over, but this costume cost me literally nothing and wearing tights underneath athletic shorts to work is wicked comfortable. Go Braves!


I originally signed-up to bring my famous baked potato skins to the pitch-in (I only say their famous because I bring them to literally every party and people seem to love them. They're really not complicated. I should post the recipe sometime!), but they take about 2 hours to finish and I was short on time yesterday. So I compromised and made baked potato salad instead and lemme tell ya, it's delicious! Then again, it's impossible for cheese, sour cream, potatoes and bacon to NOT be delicious.

The recipe is simple: Bake, peel and cube about 7 large potatoes. Add taters to a large serving bowl with 1 cup of sour cream, 1 cup of mayonnaise, 10 or so strips of crumbled bacon, and 1 cup of shredded cheddar cheese. Season with pepper, garlic salt, and paprika (and chopped green onions if your guests like onions). Mix the ingredients thoroughly and garnish with additional bacon crumbled and cheese.

Ha! A wizard and a giant gingerbread man just walked past our office. Gosh, I love Halloween!

  1. LOVE all your quotes!!!! Our office postponed all Halloween events until tomorrow, since we were closed Monday and Tuesday due to that crazy bitch, Sandy, wreaking havoc over here.

    That potato concoction looks deeeelish. And you're right - how can it NOT be good with sour cream, BACON, potatoes & cheese all in one glorious pan??? YUM x10000.

    1. I think the costumes my fellow employees wore to work were WAY more creative and thought-out than the costumes trick or treaters had on when they knocked on our door last night. Kids these days, no originality.

  2. I actually didn't dress up - never have. Ever since one of my coworkers came flying (quite literally) through the door as Mrs. Incredible (puh-lease tell me you've seen this Disney movie), complete with the Spandex suit which no woman over 40 should be wearing....ever....I've vowed never to dress up for fear of humiliating myself beyond repair.

    If I were to go to a costume party, I would dress up as Wonder Woman. Or Batgirl. Because they're both awesome. And because I'm slightly unoriginal, but hoping that by being one of those characters would inspire my friends to agree to be the whole group (The Justice League would be amazing, but I'll take the Dynamic Duo to be with my Batgirl).
